VANILLA SHEATH

This climbing orchid is native to Central America . The flavor of the vanilla bean is elegant and spectacularly complex and is due to three factors: the defensive phenolic compounds that are activated when the pod is removed from the plant, mainly vanillin; a good amount of sugars and amino acids resulting from browning reactions; and its complex and long healing process, with periods of exposure to the sun and subsequent sweating.
