Una pasta condimentada de alto aroma, sabor y color. El achiote es la semilla de un arbusto de las áreas tropicales de América, se conoce también con otros nombres como bija, axiote, achote, achiotillo entre otros.

    Or generally, it is used in meat or fish marinades. The paste is usually diluted in vinegar or orange juice. Why is it used in Mexican food? Achiote is a basic ingredient in many of the classic dishes of Mexican cuisine, such as cochinita pibil and tacos al pastor.
